North India: Punjabi Chole (Chickpea Curry)

A hearty, spiced chickpea curry cooked with aromatic spices, onions, tomatoes, and a unique blend of Punjabi masalas. Perfect with bhature (fried bread) or steamed rice.

Ingredients:

  • 2 cups chickpeas (soaked overnight)
  • 2 medium onions (finely chopped)
  • 2 tomatoes (pureed)
  • 1-inch ginger (grated)
  • 3-4 garlic cloves (minced)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 2 tsp chole masala
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • Fresh coriander for garnish

Recipe:

  1. Boil the soaked chickpeas with salt until soft. Set aside.
  2. Heat oil in a pan and temper cumin seeds. Add onions, ginger, and garlic; sauté until golden brown.
  3. Stir in tomato puree, turmeric, red chili powder, and chole masala. Cook until the oil separates.
  4. Add the boiled chickpeas along with some of the cooking water. Simmer for 10-15 minutes.
  5. Garnish with fresh coriander and serve hot with bhature or rice.
