- 2 cups spinach (palak), washed and chopped
- 200g paneer (cubed)
- 1 medium onion (finely chopped)
- 2 tomatoes (pureed)
- 1-inch ginger (grated)
- 3-4 garlic cloves (minced)
- 2 green chilies (chopped)
- 2 tbsp oil or ghee
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- ¼ cup fresh cream (optional)
- Salt to taste
- Fresh coriander for garnish
Recipe
- Blanch the spinach in hot water for 2 minutes, then transfer to ice-cold water. Blend into a smooth puree.
- Heat oil or ghee in a pan and temper cumin seeds. Add chopped onions, ginger, and garlic; sauté until golden brown.
- Stir in tomato puree, turmeric, red chili powder, and garam masala. Cook until the oil separates.
- Add the spinach puree and mix well. Simmer for 5 minutes.
- Gently add the paneer cubes and cook for another 5 minutes.
- Stir in fresh cream for a richer taste (optional).
- Garnish with fresh coriander and serve hot with roti, naan, or rice.
