  • 4 cloves
  • 1-inch cinnamon stick
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel powder
  • 1 teaspoon Kashmiri red chili powder (adjust to taste)
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon ginger powder
  • 1 teaspoon garlic paste
  • ½ cup whisked yogurt
  • 1½ cups water (adjust for consistency)
  • Salt to taste

For Garnishing

  • 1 tablespoon fresh coriander leaves (optional)
  • ½ teaspoon saffron strands soaked in 2 tablespoons warm milk (optional for richness)

For Serving

  • Steamed basmati rice or naan

Step-by-Step Preparation

📌 Step 1: Preparing the Mutton

  • Wash and pat dry the mutton pieces.
  • In a bowl, mix yogurt with Kashmiri red chili powder, turmeric, coriander powder, and salt. Coat the mutton and marinate for at least 1 hour (overnight for deeper flavors).

  • Heat mustard oil in a heavy-bottomed pan until it starts smoking slightly, then reduce the heat.
