Galouti Kebab

Galouti Kebabs are soft, melt-in-your-mouth lamb or beef patties originating from Lucknow, the capital of Awadhi cuisine. Legend has it that these kebabs were created for a toothless Nawab who loved meat but could no longer chew. This dish is an epitome of luxury and indulgence.

Ingredients:

  • 500g minced lamb or beef (keema)
  • 1 tbsp ginger-garlic paste
  • 2 tbsp roasted gram flour (besan)
  • 1 tsp garam masala
  • 1 tsp black pepper powder
  • 1 tsp nutmeg and mace powder
  • 1 tbsp raw papaya paste (as a tenderizer)
  • 2 tbsp ghee for frying
  • Salt to taste

Instructions:

  1. Prepare the meat: Mix minced meat with ginger-garlic paste, gram flour, spices, papaya paste, and salt. Marinate for 1–2 hours.
  2. Shape the kebabs: Divide the mixture into equal portions and shape into flat, round patties.
  3. Cook: Heat ghee in a pan and shallow fry the patties on medium heat until golden on both sides.
  4. Serve: Garnish with onion rings and mint chutney.
