Galouti Kebabs are soft, melt-in-your-mouth lamb or beef patties originating from Lucknow, the capital of Awadhi cuisine. Legend has it that these kebabs were created for a toothless Nawab who loved meat but could no longer chew. This dish is an epitome of luxury and indulgence.
Ingredients:
- 500g minced lamb or beef (keema)
- 1 tbsp ginger-garlic paste
- 2 tbsp roasted gram flour (besan)
- 1 tsp garam masala
- 1 tsp black pepper powder
- 1 tsp nutmeg and mace powder
- 1 tbsp raw papaya paste (as a tenderizer)
- 2 tbsp ghee for frying
- Salt to taste
Instructions:
- Prepare the meat: Mix minced meat with ginger-garlic paste, gram flour, spices, papaya paste, and salt. Marinate for 1–2 hours.
- Shape the kebabs: Divide the mixture into equal portions and shape into flat, round patties.
- Cook: Heat ghee in a pan and shallow fry the patties on medium heat until golden on both sides.
- Serve: Garnish with onion rings and mint chutney.
